Banana Nut Bread



1/2 Cup Brown Sugar
1 Cup (White Sugar)
3 Cups Self Rising Flour
8 Peeled VERY Ripe Bananas
1 Stick Melted Butter
1/2 Cup Canola Oil
3 Large Eggs
2 teaspoons Cinnamon
Dash of Allspice
Pinch of Salt
2 teaspoons Vanilla
1 Cup Chopped Toasted Pecans

Preheat oven to to 350 degrees.  Meanwhile cut bananas into decent sized chunks, place in bowl and microwave – lightly covered – heat on high for 4-5 minutes.  Strain liquid from bananas into small sauce pot.  Boil banana juice over medium high heat until reduced by half.  (This condenses the bananas’s natural sugars without adding extra liquid to your bread recipe)  Add reduced liquid back to banana solids, mash with potato masher until silken.

Put sugars and flour in a very large bowl.  Stir in bananas and remaining ingredients.

Pour into greased loaf pan, mine is 9-1/4 x 5-1/4 x 3

Bake an hour or so, until dark, crusty brown and a knife inserted in center comes out clean.
