Black-eyed Pea and Avocado Salad

1 cup Black-eyed Peas
1 Tablespoon chopped Red Onion
1 Tablespoon Parsely Flakes
1/3 Cup FussBudget “Garden” Dressing <~~~Click here for recipe

Mix together above ingredients, allow to marinate a few hours in fridge.

Layer in Salad bowl:

Sliced Iceberg, Mixed Greens, Cubed Fresh Avocado, Marinated Black-eyed Peas and Cornbread Croutons.

Garnish with Tortilla Chips
